Kayla Petersen is our new intern. She is a sophomore Nutrition Major with a Dietetics concentration at Miami University. She is originally from Pennsylvania.
What sparked your interest in nutrition?
"I would have to say the atmosphere and lifestyle of the profession is what sparked my interest in nutrition. Nutrition isn’t just a job but a complete lifestyle where I take care of myself and other people. Having the opportunity to encourage people in positive ways to help motivate them to choose a healthy lifestyle, that not only improves their self-image, but also in relationships is extremely rewarding. Some people might say “A dietitian is useless because I could find that information online”, but being a dietitian is so much more than that. It’s science, psychology, art, culinary, and medical. It’s so much fun to explore all the different options and areas throughout the profession."
How do you keep fit and healthy?
"One of the many ways that I keep fit and healthy is by adventuring outdoors. After a long hike up a mountain, I always feel extremely refreshed and accomplished. I’m a huge goal setter so when it comes to exercise, I always try to make it fun and challenging. I also LOVE vegetables, and don’t roll your eyes at me just yet because the runner up to that is pizza and ice cream! The main thing I find important is that I love eating what makes me feel great. Once I’m full I stop and I feel like I can conquer the world!"
Do you have a favorite cookbook and or book relating to health?
"If Pinterest were a cookbook, that’s definitely what my favorite book would be! That’s where art and creativity play a huge role in why I want to go into dietetics. Pinterest is loaded with fun little ideas to play around with and experiment! If you don’t know what to do with that extra can of soup, I bet pinterest has an answer to your problem! It’s all about having fun, trying new things, and creating a masterpiece of colors and shapes that are mouthwateringly DELICIOUS!"
What is your favorite meal or food?
"As I said, I’m a huge fan of my veggies! But I think the main reason for this is because I use them in so many different ways. Maybe on Monday I feel like making a margarita pizza with spinach, tomatoes and cheese. But then on Tuesday I feel like having a black bean burrito that I can load that up with peppers, spinach, tomatoes, corn, onions, and anything else I would want to throw in! I could even whip up some yummy roasted cauliflower tots as a side! The options are limitless!"
